****COOKING DIRECTIONS****

Below you will find cooking directions for current menu items as well as items from previous months.



Chicken Cordon Bleu
Please chicken breast on lined baking tray, sprayed with a non stick spray.
Conventional Oven:  35 to 40 minutes at 350 degrees, uncovered, from frozen state
Convection Oven:  25 - 30 minutes at 325 degrees, uncovered,  from frozen state


Chicken Breasts with Apple / Almond Stuffing
Please chicken breast on lined baking tray, sprayed with a non stick spray. Baste breast with butter
Conventional Oven:  35 to 40 minutes at 325 degrees, uncovered, from frozen state
Convection Oven:  65 - 70 minutes at 350 degrees, uncovered,  from frozen state




Stuffed Chicken Breasts / w Gouda Cheese

Conventional Oven:  55 to 65 minutes at 325 degrees from frozen
Convection Oven:  40 - 45 minutes at 325 degrees from frozen


Beer Battered Shrimp

  1. Pan Fry: Place frozen breaded shrimp in 1 inch of hot, but not smoking, oil and fry for 3.5 minutes. Turn frequently. Transfer to plate lined with paper towels to drain, and serve immediately.
  2. Bake: Preheat oven to 425°F. Arrange frozen shrimp in single layer on baking sheet so shrimp are not touching. Bake for 5-6 minutes on middle level, flip shrimp, then bake an additional 5-6 minutes.


Calzones  (5 oz size)

Reheat Calzones: Thaw the calzone for a few hours in the fridge, or extend the cooking time to re-heat from frozen. If you put one in your lunchbag in the morning, it will be thawed enough by lunchtime. Unwrap from the plastic before reheating.

Reheat them in the microwave in one-minute bursts on HIGH until heated through (2-3 minutes total), or in the oven or a toaster oven at 300° until heated through.
 

"Mini Steak & Cheese Calzone Crescents
Heating Directions:  
Bake:  Thaw
Convection Oven:  
Preheat oven to 325 degrees. Place crescents on sheet tray, bake for 6 - 8 minutes
Conventioinal Oven:  
Preheat oven to 375 degrees. Place crescents on sheet tray. Bake for 12 - 14 minutes


**BREADED CHICKEN TENDERS

Appliances vary, adjust accordingly.
Uncooked: for safety, product must be cooked to an internal temperature of 165 degrees
Deep Fry: 6 to 7 minutes at 350 from frozen state, do not over pack the basket, shake basket occasionally while frying. DO NOT MICROWAVE

the box does not include cooking directions for baking in the oven. Bake at 400 degrees. Because the tenders are so meaty, I would bake them for 30 minutes  to 1 hour or until fully cooked. 



French Toast Sticks

Cook from frozen:
Deep Fry 350 degrees for 70 seconds
Oven  375 for 8 to 10 minutes
Convection Oven  425 for 6 to 7 minutes
*when oven baking turn over midway through cooking or change to Broil

Microwave 5 sticks on microwave High for 1 1/2 minutes

SMOKED HALF CHICKENS
in the absence of cooking directions, I prepared mine last night, to give you some suggestions from my experience.
I thawed first in the microwave, but you could let thaw naturally as well.
After removing them from the bag I put them in a glass baking dish and baked them in the oven 30 minutes at 425 degrees.
I also covered the pan with foil.
A customer told me today they placed the thawed half chickens on the grill, and they were very tasty. 


Beef Burgers
these are fully cooked, you can heat them in the microwave, skillet, oven, grill until hot all the way through, and then enjoy!!


Salmon Filets
Bake:  30 to 35 minutes @ 375 degrees, add a pat of butter, lemon juice or your favorite addition when cooking Salmon
Grill or Smoke on the grill. 


**CORN NUGGETS
Deep fried for 2 or 3 minutes or baked in the oven.. I baked mine at 400 degrees for 15 to 20 minutes 
a customer said she put hers in the microwave for 2 minutes, and they were yummy!

 

"Breaded Chicken Breasts"
Appliances vary, adjust accordingly to ensure internal temperature reaches 170°F. 
**Deep Fry Deep fry for 9-10 minutes at 350°F from frozen. 
**Bake in Oven     425  20-25 min 
FYI ~ i fixed some for dinner tonight, I baked 3 at 425 for 30 to 40 minutes.. the main thing is to cook until done.

PRIME RIB ROAST
cooking directions from a thawed state
Heat oven to 350. The roast is vacum packaged and sealed to ensure freshness. Open the package, pour natural juices into a baking pan. Remove roast and place, fat side up in a pan with the juices. Cover with foil, allowing a 2-inch space between roast and foil, creating a tent over the roast. Place in oven to desired degree of doneness at the stime specified on the chart below.

Medium Rare Roast, cook 1 hour 15 minutes
Medium Roast, cook 1 hour 25 minutes

DO NOT OVERHEAT, roast is already cooked
Remove roast from oven, let stand covered 10 minutes. The standing time is very important to finish off the heating process, the internal temperature will continue to rise slightly during this time.

Carving
remove roast from pan with a large carving fork and place on a clean surfce, fast side up. Secure roast with fork and cut downward with a large, sharp knife into slices. Arrange slices on a serving plater or on individual slices. Strain juices, serve over roast or pour into a gravy dish and serve separately.

 


BLACK FOREST HAM

Preheat Oven to 325 degrees, remove the packaging and put the ham in your roasting pan.
Cut a diamond pattern 1/3" deep into the exterior of the ham, using a knife to make diagonal lines. This will allow the glaze and spices to infuse the interior of the ham while cooking, adding more flavor. Whole black forest hams require 10 to 15 minutes of baking time per lb to achieve temperature of 140 degrees.

Glaze recipe if you wish to use for added flavor: put dried cranberries in a saucepan, add dry red wine and orange juice. Bring to a boil, stir and simmer 5 minutes. 
take the ham out of the oven about 30 minutes before 
it is finished baking, cover with glaze, using a pastry brush, return ham to oven.
remove the ham from the oven every 10 minutes to add glaze and baste with its natural juices. Allow to cook for 20 minutes before serving. 




Schwann's Breakfast Pizza Cooking Directions

The cooking directions are on the outside of the box, and the little packets to bake them in is in the box with the pizzas.
The directions says convection oven, since most of us do not have a convection oven, this morning I prepared a pizza so I could test cooking directions. This is what I came up with. Using the same temperature 350 degrees, bake the pizza in an oven for 10 to 12 minutes. I baked mine for 10 minutes it was done, but I think a couple more minutes would have been ok too. They are very good.
I have also decided that because the pizzas need to be thawed before they can be put into the packet that I am setting them out in a single file to thaw enough to fold to put in the packet, then putting them back in the freezer, that way they are ready to bake one at a time or the whole bunch at one time. If you are baking more than one, you will probably need to adjust the baking time.

"Perdue Stuffer Roaster Boneless Chicken Breasts"

Thawing: thaw in original plastic package in refrigerator for 2 to 3 days
Cooking: remove roast from plastic bag and wrap with foil folds, turned up before cooking
Place foil wrapped (frozen or thawed) roast in a 2 inch deep pan (cooking with foil wrap keeps roast moist)
Cook following temperatures and time guide
To Brown, turn roast over and peel back foil 30 minutes for a convection oven, 60 minutes for a conventional oven before end of cooking time.

Remove from oven, remove netting with scissors while roast is still hot. Let stand 20 - 30 minutes for easier slicing.

"GOLD FOIL TURKEY BREAST"

Keep frozen until use, thaw in refrigerator for 24 hours or 5-6 hours in cool water.
Preheat oven to 300 degrees (convection) / 350 cake (conventional). Remove plastic bag, but leave in foil. Place in roasting pan and add 1 inch water. When center of roast reaches 110 degree F, remove from oven and peel back foil to brown. Return to oven. Remove from oven when internal temperature reaches 160 degrees. Total cooking time, approximately 20 minutes per pound. Let stand 10 minutes before carving

Schwan's Pizza Conventional Oven:
for a softer crust bake at 400; place pizza on cookie sheet in oven on center rack. Bake for about 10 - 23 minutes
for a crisper crust bake at 425 directly on center oven rack for 16 – 19 minutes.
Pizza is done when cheese is melted and edges are golden brown. Let pizza stand 5 minutes before serving.

 

 


****RECIPES****



FRENCH TOAST BREAKFAST CASSEROLE

25 French Toast Sticks
4 eggs
2 cups cream
1/2 cup maple syrup
1 tsp vanilla extract
2 cups sour cream

1 cup sugar
1/2 tsp cinnamon
powdered sugar to taste

Directions:
Preheat oven to 300 degrees
Blend all ingredients EXCEPT French Toast Sticks and Powdered Sugar in large mixing bowl until fully blended.
Layer French Toast Sticks in a 9 x 13 baking dish and cover with mixture. Bake uncovered in oven for 1 hour.
Serve with powdered sugar and maple syrup




 


SAUSAGE & CHEESE STUFFED ZUCCHINI OR GREEN ITALIAN SQUASH:

3 – Zucchini (cut in half lengthwise)

1# seasoned chicken sausage or seasoned pork sausage (I just buy the Hot Chicken Italian Sausage @ Sprouts and take it out of the casing)

1 cup Italian Bread Crumbs

1 clove minced garlic

1/4 cup chopped onion

1/4 cup chopped red bell or green bell pepper

1/4 cup chopped mushrooms

1/2 cup Parmesan cheese (fresh is the best)

1 cup shredded mozzarella cheese

Preheat oven to 350 degrees

Trim stems from zucchini and slice lengthwise. Scoop out seeds and put in bowl. Mix seeds with sausage, garlic, bread crumbs, and additional vegetables and Parmesan cheese. Stuff squash with sausage mixture and place in a 13 inch baking pan. Pour sauce over squash and cover pan with foil.

Bake in preheated oven for 45 minutes, or until sausage is cooked. Remove foil and cover with mozzarella cheese. Cook until cheese is melted.

A simple and good way to use green squash:


"Bacon . Squash . Onions Stir Fry"

Equal amounts of:

Bacon (cut in small pieces and browned)

Squash (sliced thin )

Onions (sliced thin )

Stir fry until tender

Grilled Pineapple-Chicken Kabob Packs

1/3 cup pineapple preserves

2 tablespoons packed brown sugar

1 tablespoon soy sauce

1/4 teaspoon crushed red pepper

4 boneless skinless, chicken breasts, cut into 2-

inch cubes

1 medium red bell pepper cut into 1 1/2 inch cubes

1 medium green bell pepper, cut into 1 1/2 inch cubes

1 cup pineapple chunks

1/4 teaspoon salt

1. Heat gas or charcoal grill. In small bowl, stir together pineapple preserves, brown sugar, and soy sauce and crushed

red pepper.

2. Cut 4 (24x12 inch) sheets of heavy-duty foil. Divide chicken, bell peppers, pineapple chunks and pineapple preserves

mixture among foil sheets. Sprinkle with salt. Bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2 inch

fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.

3. Place packet son grill over medium heat. Cover grill; cook 6 minutes. Using tongs, carefully turn packets over, taking

care not to puncture foil. Cook 10 to 12 minutes longer or until chicken is no longer pink in center and vegetables are

crisp-tender.

Grilled Cheddar Burgers and Veggies Packs

1 pound lean ground beef

1 cup shredded Cheddar cheese

1 tablespoon Worcestershire sauce

2 medium green onions, chopped (2 tablespoons)

1 teaspoon peppered seasoned salt

2 medium yellow Yukon potatoes, thinly sliced

1 1/2 cups baby-cut carrots

12 cherry tomatoes halved

4 medium green onions, sliced

1/2 teaspoon peppered seasoned salt

1. Heat coals or gas grill for direct heat. Spray half of one side of four 18x12 inch sheets of heavy-duty foil with cooking

spray.

2. Mix beef, cheese, Worcestershire sauce, 2 chopped onions and 1 teaspoon seasoned salt. Shape mixture into 4

patties, about 1 inch thick.

3. Place potatoes on sprayed sides of foil sheets. Top with beef patty, carrots, tomatoes and sliced onions, sprinkle with

1/2 teaspoon seasoned salt. Fold foil over patties and vegetables so edges meet. Seal edges, making tight 1/2 inch

fold; fold again. Allow space on sides for circulation and expansion.

4. Cover and grill packets 4 to 6 inches from medium heat 17 to 20 minutes or until potatoes are tender. Place packets

on plates. Cut a large X across top of packet; fold back foil.

Frosted Strawberry Salad

2 packages (6 ounces each) strawberry gelatin

3 cups boiling water

2 packages (10 ounces each) frozen sweetened

sliced strawberries, thawed

1 can (20 ounces) crushed pineapple, undrained

1 cup chopped pecans

1/2 cup chopped maraschino cherries

Topping

1 package (8 ounces) cream cheese, softened

1 jar (7 ounces) marshmallow crème

1 carton (8 ounces) frozen whipped topping, thawed

Fresh strawberries and mint

1. In a large bowl, dissolve gelatin in boiling water. Stir in strawberries and pineapple. Refrigerate until partially set.

2. Stir in pecans and cherries. Transfer to a 13x9 in. dish. Chill for 2 hours or until firm.

3. For topping, in a small bowl, beat cream cheese and marshmallow crème just until combined; fold in whipped topping.

Spread over salad. Chill for several hours or overnight. Cut into squares. Garnish with strawberries and mint.
